Yes, it is fixed. My apologies for not having read upstream's
changelog; this bug report can be closed now.

In CUPS' web interface, in "Modèle/Pilote pour $my_printer"
("Model/Driver for $my_printer?) I selected "Canon S800 -
CUPS+Gutenprint v5.XX (en)", where XX was the version number at the
time.
The top of /etc/cups/ppd/$my_printer.ppd reads :
*ModelName: "Canon S800"
