Hi Scott,
I've successfully used your procedure (appropriately localized to my own environment) to do an install on an amd64 VM under VMWare Fusion on my friendly local Mac mini.
So I think I could do the same thing on a PowerPC Mac if I knew the ppc equivalents of isolinux.cfg as used by you for i386 -- and the ppc equivalent of the genisoimage magic you use to make the bootable image.
I've CC-ed the installer and powerpc lists, in hopes that someone there can point me in the right direction.
