Hi,
Is it by choice that you did not use the make-kpkg system provided by
debian ? If it is just that you were unaware of it, maybe it is worth
giving it a try: it standardises and automates most of the steps you
describe. If you experience the same problem with kernels made "à la
Debian", then you will be more sure that the problem is not the
installation, but the kernel itself.
PS: make-kpkg is in the package named "kernel-package".
