Make sure that you have modules sbp2, ieee1394 and ohci1394 loaded, then make 
sure the iPod is recognised by checking /proc/scsi/scsi.

You can then just mount it by doing mount /dev/sda2 /mnt/ipod -t hfsplus, 
assuming the iPod is assigned /dev/sda.

You're going to have to do a bit of hunting around for the music; I'm not sure 
where it's kept as I've never tried to grab music off an iPod before (but 
they make very handy disk drives.. :)
