Because it's (almost) a VESA standard modeline, and thus support for it
is built into the XFree86 4.x X server.

Apparently the iMac monitor is forgiving of the the less than 1%
difference between the VESA standard modeline and the one you quoted
above.  Or perhaps, as someone else said, the monitor will eat anything
you feed it as long as it's 60.0kHz horizontal.
