you can't.  oldworlds had OF on a real ROM, not flash.  there is no
way to upgrade it.  if there was you can be sure apple would have
released an upgrade for the beige G3s rather then the giant pile of
kludges used to try and brute force OSX into booting on them (which
still isn't all that reliable). 

you might be able to remove the chip and replace it if your skilled at
fine electronics soldering, but you still have the problem of writing
a compatible implementation of OF for undocumented hardware.
