You can change the preferred applications, yes, of course.

No way it's going to default to sensible-editor, at least not in its
current form. If the user doesn't have EDITOR set, then it's going to
invoke nano in an xterm? That'd be absolutely horrible.

Sure. For GNOME, the default is something that is also a GNOME
application. That's the point of an integrated environment.
