The following packages, in potato, use postscript-preview in
some way.

Package: psptools
Provides: postscript-preview

Package: psutils
Provides: postscript-preview

Package: xpdf-i
Provides: pdf-viewer, postscript-preview

Package: xpdf
Provides: pdf-viewer, postscript-preview

Package: acroread
Provides: pdf-viewer, postscript-preview

No package currently depends/requires/suggests it. pdf-preview is not
used at all. Programs like gv (which can write postscript) and dvips
seem to be missing.

IMHO, the name "-preview" is misleading.
