This version doesn't exist. Maybe you mean 4.1.0, and even then that
version doesn't eixist (it's not a complete version number).
> gnome as a package to remove (gnome is my desktop environment).
No, it doesn't (see below)
> apt-get install libreoffice libreoffice-gnome does not try to remove gnome.
Probably because your mix (you have a testing saying "7.0" where it shouldn't,
you have 4.1…0-5 vs. 4.1.1-1 mix. did you do manual stuff?) makes this
necessary- it isn't per se.
The "gnome" dummy package fwiw depends on libreoffice-gnome, so you want/get
that installed anywayi and can't have it without it.
And it also depends on libreoffice itself (-calc, -writer, -impress, ...)
I only can imagine that some version skew in your mix makes apt try to remove
something needed (and thus also the "gnome" dummy package).

It it perfectly co-installable:
fresh jessie chroot:
1. apt-get install gnome
[...]
Need to get 761 MB of archives.
After this operation, 2461 MB of additional disk space will be used.
(incl. loads of gnome stuff *and*
librasqal3 libraw1394-11 libraw9 librdf0 libreadline5 libreoffice-base-core libreoffice-calc
libreoffice-common
libreoffice-core libreoffice-draw libreoffice-gnome libreoffice-gtk
libreoffice-impress libreoffice-style-galaxy libreoffice-writer librest-0.7-0 librhythmbox-core7
etc.)
With that most parts of LO are installed and the dummy "libreoffice" package
does not need to install very much more:
2. apt-get install libreoffice
The following extra packages will be installed:
fonts-sil-gentium fonts-sil-gentium-basic libhsqldb1.8.0-java libreoffice-base libreoffice-report-builder-bin libservlet2.5-java
Suggested packages:
java-virtual-machine libhsqldb1.8.0-java-gcj cups-bsd hyphen-hyphenation-patterns libreoffice-grammarcheck libreoffice-help-4.1 libreoffice-l10n-4.1
myspell-dictionary mythes-thesaurus openclipart-libreoffice unixodbc gstreamer1.0-ffmpeg libreoffice-officebean libmyodbc odbc-postgresql libsqliteodbc tdsodbc
mdbtools libmysql-java libpg-java libjtds-java
libreoffice-gcj libreoffice-report-builder
The following NEW packages will be installed:
fonts-sil-gentium fonts-sil-gentium-basic libhsqldb1.8.0-java libreoffice libreoffice-base libreoffice-report-builder-bin libservlet2.5-java
(basically only base.)
And it works. ANd it doesn't remove "gnome":
Come back and reopen this if you have a clean system (aka do a dist-upgrade
to current testing and/or stay at stable and use backports, but don't mix
stable and install stuff from testing directly) and this persists...
(which I doubt will)
Until then I will close this "bug".

oh, and if it removed only "gnome" it removed a empty package...
(Shouldn't happen, though)

1:4.1.1-1
Severity: normal
Dear Maintainer,
=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-==-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=
Since libreoffice 1.4.0 I've noticed that apt-get install libreoffice selects
gnome as a package to remove (gnome is my desktop environment).
apt-get install libreoffice libreoffice-gnome does not try to remove gnome.
Is there a way to change the dependencies in the libreoffice package so that
installing a new version does not try to remove gnome? That seems unnecessary
since including libreoffice-gnome avoids the problem and uninstalling the
desktop environment just to upgrade this application seems excessive.
