FWIW, I use scim (the GTK+ panel) with scim-pinyin without any problem
in OO.o.

You can try changing the scim activation key to something other than
Ctrl-space.

Did you start scim during X startup? AFAIK neither GTK_IM_MODULE nor
QT_IM_MODULE works for OO.o. Read documentations in
/usr/share/doc/scim/ for the proper way to set up scim for non-GTK+ and
non-Qt applications.

If you are using skim-applet, most likely you are using skim (the KDE
frontend/panel of SCIM), not scim (the GTK+ frontend/panel of SCIM).
