WTF do you want to rebuild OOo instead of simply apt-get install'ing it?
Note the current i386 packages use -Os for opimnizing for size already
(and -mtune=pentiumpro). And changing the optimizations on OOo lets you
quickly run into weird bugs...

No idea. Works fine with plain dpkg-buildpackage / debuild and also inside
sbuild/.
You need to get a person knowing what apt-build does to fix that (and
send me a patch). I don't see a real sense in apt-build anyway so this
is not something I will invest much time to fix...
