That is because the handling of the dictionaries changed and the old
packages are incompatible. Therefore the new openoffice.org conflicts:
with them.
myspell-de-* packages should be on their way
(see http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=206125)
and those have to be installed.
openoffice.org-spellcheck-de-* will be removed after those myspell-*
pkgs enter sid...
