You should also read the Debian Maintainers Guide if you want to
maintain a package.

Please only package a software when you are interested in it (don't
package just because you want to package).
Since I don't know what fits your definition of 'interesting' better
take a look the WNPP[1] page.
There you can help existing packages, adopt a package, or see what
people request to be packaged.
