Unfortunately, the live-images git repository isn't used at the moment.
See https://wiki.debian.org/ReproducibleInstalls/LiveImages (the rebuild.sh script) for locally building images that are similar to the official live images.

Can anybody point me out on how I can build and then customize a Debian
GNOME live image?

You can prepare the configuration once, using the rebuild.sh script. Then abort that build and add all your custom things.
Then `lb clean --purge;lb config;lb build` to start the build from scratch.
