Indeed there is.It's documented in 'man live-build': there are some command line options that are explicitly not stored in the configuration file, but need to be provided to each 'lb' invocation.
So in your case you would want to use 'lb build --debug'.As a benefit, your unmodified configuration can also be used to build without the debugging information.
