Untested, but should work:

In this example http://live.debian.net/manual/unstable/html/live-manual.en.html#859

echo "task-lxde-desktop iceweasel xchat" >> config/package-lists/my.list.chroot

modify that to something like

echo "task-xfce-desktop" >> config/package-lists/my.desktop.chroot

If you wanted multiple desktops adjust accordingly.
