It is definitely not common practice to document the copyright/license
info of dependencies in about dialogs. Sometimes it happens in the
build documentation in the source package but not always and that
usually isn't distributed in the binary package.

In distributions like Debian, usually programs dynamically link their
dependencies so the copyright/license info of dependencies accompanies
the binaries of the dependencies instead of the programs. Then the
dependency information plus the individual package copyright info
ensures that the license information for all components is present.

It is only because of static linking that the issue you mention arises.
