Is your kernel framebuffer-enabled? (when you boot do you see a little
penguin in the top left corner?)

You can probably force a downgrade of X itself, rather than uninstall
half the planet's worth of software. If you have not yet cleaned out
your cache, and had decent room for it, the older X .deb's will still
be in there.
Mind you will want to get them all at the same time, and you can't use
the menu-based helpers for this; you'll be sitting there in
/var/cache/apt/archives messing with dpkg -i.

curious you're not seeing the same menus Jeremy is; try reconfiguring
debconf itself, to show you the questions every time instead of hide the
ones you answered already.

The classic symptom of declaring more memory than you really do have is
for the cursor to become an ugly blob (because the backing-store for it
is coming from hyperspace). I wouldn't be surprised if color insanity
were another symptom of the same thing.
Do you still have a copy of the XF86COnfig file from before the upgrade
got to it? Maybe it says how much vidram you really do have.
