DVD boots 64-Bit, but HDD Install boots 32-bit.

Sorry if this is off topic for the mailing list, but I've forgotten my
log-in details for the Knoppix Forums and the forgot password and
contact forms there both use a vision test in place of a Turing test
and sighted assistance isn't an option due to not having a monitor.

Anyways, I recently downloaded the latest public release of
Knoppix(8.6.something I believe) and did a micro remaster to bake in
the Adriane64 cheat code and toss out the secondary cloop images since
the primary Knoppix image already bundles far more software than I'd
ever need.

Anyways, after rebuilding the ISO, I burned it to DVD and successfully
booted into Adriane running the 64-bit version of the kernel. However,
after doing a hard drive install, something I've been doing since at
least the 6.2 days when there were still CD images, it boots with the
32-bit kernel.

Now, I've been running with the 32-bit kernel for years as to my
knowledge, it's only been very recently that the option to boot with
both Adriane and 64-bit has been available, but I really want to give
usiing 64-bit for daily use a try.

Any idea how to get my Hard drive install booting with the 64-bit
kernel? Preferably in a way that makes that the default... and any
idea how to tell Apt/aptitude to start installing 64-bit packages when
available?
