This does not happen on 2.6.30-1-amd64, so I simply use the older kernel for now; when the older kernel boots, I do see the software raid being detected and configured.

My system uses software RAID on all of its drives, including the boot device.

linux-image-2.6.30-2-amd64 refuses to boot for me; it cannot find the root filesystem, and it appears the reason is because it can't find any of the software raids.  The uuid's for the software raid devices are not present, nor are the normal /dev/md? entries.  /proc/mdstat doesn't exist either.

I've taken a full log of the boot (via serial console), and dumped it to a file, which I'll include as an attachment.

no it doesn't. please watch carefully what you do,
when you follow Testing/Unstable.
