I can repeatably cause a kernel panic simply by hitting CTRL-ALT-Backspace.
I have seen the panic on screen in one case, but I have not been able to
actually capture the panic in the logs, nor do I have any meaningful output
in X's log. I *can* switch to the text console and back while X is running
without any problem.
After much Googling, looking through the Debian BTS, xorg Bugzilla, etc., I
finally found someone with a similar situation in the Ubuntu forums:

Yes, I know Debian is not Ubuntu, but it seems to prove that I'm not crazy.
