well the trouble that you are experiencing happened in lots of different
distros, fedora ubuntu..
the switch to LABEL or UUID device usage is never painless.

the trouble is that there is that debian installer still does *not* use
UUID and that old fstab and boot confs don't get converted yet.

a home build kernel is always a maintenance night mare.
