The cause is:
	alias ls='ls -color'
just comment this out.  You can modify /etc/skel/.bashrc
to make sure it doesn't come back.

PS1 does some other "stupid" things ... but take a look at a root shell
on RedHat some time ...

See above.

BTW ... I never su to 'user' from root ... my first account is always
admin, from which I use 'sudo' to admin the box.  You can tell the
installer that your name is "Admin HOSTNAME" and it will prompt you with
username 'admin' ... when you set up email tell it to forward all mail
to 'admin' (the default) and you may then alias that to a central
account if you are on a network (don't send to postmaster w/o permission
of your email admin though :-).
