Hi, I think the way Debian installs Java implementations makes most of that moot.
PATH: Debian puts the java-related commands into /usr/bin which should already be in your path. The update-java-alternatives command lets you select between Java implementations.
JAVA_HOME: Mostly you can ignore this however some applications require a setting of JAVA_HOME. You can always set it to your preferred directory under /usr/lib/jvm
