You want kernel-package.  You can have the latest kernel on stable w/o
draging your production box into the unfriendly waters that is
testing/unstable.  It may be too late if you've upgraded already
(unless you put everything on hold, or downgrade but you better have
backups before you try!).

This keeps your kernel with your .config all thightly wrapped up in a
.deb you can keep around.  Uninstalls like a charm like any other
package should.
