auto-sorting incomming email based on body

does anyone know of an application, or maybe a guide
that can help you write an application/algorithm that
can analyze the body of emails and sort them to
different categories based on rules the application
itself learned?

something like spam filtering using bayesian
statistics, only this time, you dont just "train" the
application by marking emails as spam or not-spam, but
instead you first train it by maybe, manually sorting
out the first emails and then it can learn from that.

the categories maybe something like "complaints",
"refund requests", etc., the kind of stuff a service
provider get hundreds of in its admin@ or info@
mailbox.
