You can configure mail servers to deliver mail via SSL (if the receiving 
machine supports SSL), Postfix supports this reasonably well.  For 
downloading mail you can install a POP server that supports SSL (courier-pop 
is working well for me) and then disable the non-SSL POP server if you wish.
