Finally it worked:
chroot /target
grub-install /dev/hd0

Comments on the DI:
- Why is hurd-install not available when running expert mode and a
shell?

- Why do I have to go through language, network, domain name, root, user
settings before being able to execute a shell having grub-installer in
the path??

- Previously a rescue mode was available from the main menu on the boot
disk (not your fault, its the DI)
