RFC: Removing some unneeded packages from unstable (and testing)

Hi,

During the Debian 11 release cycle, I introduced a bunch of packages
required by crowdsec; I've done that with another bunch during the
Debian 12 release cycle, which obsoleted some packages introduced in
the first round.

Namely:
 - golang-github-facebook-ent is now replaced by golang-entgo-ent:
it's the same code base, but it evolved a lot, and is now
   maintained outside the Facebook namespace.
 - golang-github-logrusorgru-grokky is now replaced by
golang-github-crowdsecurity-grokky: the former is unmaintained, so
crowdsec upstream forked it to pick up maintenance.

There are no reverse dependencies in unstable right now, and filing RM
requests seems to make sense, but I thought I'd give everyone a chance
before filing them.

As far as I can tell, removals from unstable can still sync to testing
during any freeze stage, so removals should happen in testing as well.

Cheers,
