Hello,

Is it possible for gcc-defaults to not provide /usr/bin/gcc & co. but
using the alternatives ?

Personnally I want /usr/bin/gcc to point to /usr/bin/colorgcc and it's
remove each time I upgrade gcc.

no, please see the README in the package.

you could use diversions (dpkg-divert) to prevent overwriting on
upgrades.
