I highly recommend that you look into using pbuilder or sbuild (i.e.
with a chroot) for building packages.  These tools are designed to
avoid any sort of interference from the package to the system or vice
versa, similar to what you've experienced.

That said, I'm going to add a "Provides: fontforge-nox" like you
suggested in my next upload of 1:20201107~dfsg-3, which will happen
later today.  Please let me know if it works for you or not.
