I don't understand what you mean. dpkg-architecture accepts sh3, so
I don't see what else dpkg-cross is meant to do.

I need an example, I need to see what doesn't work and try to work out

No. The %crossprefixtable variable is no longer used (or accessible) and
is likely to be removed before dpkg-cross merges into dpkg.

I don't understand why you want to change a table that is not
referenced in the rest of the package and which has no prospect of
being retained in the dpkg version. What can that achieve or fix?

I also cannot see that changing the debconf templates is the right
approach - that list needs to be kept in line with what Debian supports
and there is (currently) no SuperH port. There is support for other
architectures via the configuration files but that should not be via
debconf, otherwise the debconf list becomes unmanageable.
