I think there is some misunderstanding.
The output you have is the new ouptut in upstream's version 18. See upstream
commit:

I don't think there is a way to revert to the output of `efibootmgr` as in
version 17.
AFAIK, the -u option is only used at the time of creating an entry when one
wants to set an optional parameter for the EFI loader.
