I know this problem from $WORKPLACE:
Every time I restart the slapd running on the same maschine where the NFS server
lives, rpc.mountd dies the next time a client connects. Open NFS connections
stay alive.
I worked around this by adding /etc/init.d/nfs-kernel-server restart in
/etc/init.d/slapd...
