The man(7) page is pretty good. I learned it from that and from looking
at examples; it's not difficult. You can use something like
nroff -man filename.8 | less
to preview your work.
There is also a Man-Page mini-howto. I've never read it, but it looks
interesting on first glance.
There are of course plenty of examples to look at. 8 MB of them,
on my system :-)
