According to file:///usr/share/doc/menu/html/ch3.html#s3.4 (from package menu) you just need to needs-field to the value "text". For desktop files, "Terminal=true" should do the trick (but it's just a guess, since I saw "Terminal=false" in one of mine desktop files).
