As you might have registered, there were some serious backlogs on some
archs, such as mips, mipsel and arm. There have been some efforts to reduce
that backlogs with additional buildds using a separate wanna-build database. 
Your mentioned NFU list is only considered on the "official" buildds using
the "official" wanna-build database. But to get things done quickly we had
to use "unofficial" buildds and an "unofficial" wanna-build.

There have been people manually building packages as well, but I've seen
xerces being built either on paco, pepe, pancho or hokusai. Please check
www.buildd.net as well. 
Regarding the logs... well, we're sending our logs to buildd.debian.org, of
course, but we have no control if they're filtered/deleted or not. You have
to ask the admin of buildd.debian.org, why they don't appear there. Well,
from time to time it may happen that a log get lost by accident in
mailrouting, but it's quite uncommon that this happens to all logs.

Yes, the situation could be better, but, well, it is like it is... 
Maybe all NFU packages should be retried from time to time?
