Bug#78688: README.mail exim info wrong

A much simpler way seems to be working for me: just use the suggestion
for dedicated sites, and add 'domains = <domain>' to the director's
options.

I'd be happy to add both this and your suggestion to README.mail, unless
an exim guru points out any obvious mistakes.
