Bastian uploaded devmapper 2:1.02.03-1 in the meantime, which does make the device modes overridable (but I've not yet seen how to use this, it may be just the API addition to libdevmapper at this point). However, the default is still unchanged, and so I'll apply my patch as originally proposed in the NMU.
