I cannot give advise how to let debian-cd produce a custom sized ISO.
But a few years ago i wrote a script which combines smaller Debian ISOs
into a big one. See

You could merge the first three BD-sized ISOs from
https://cdimage.debian.org/debian-cd/current/amd64/jigdo-bd/
to get ~ 75 GB of result. Maybe even four of them will fit. You would
have to try how large the result becomes.
Or you could merge a larger number of DVD-sized ISOs from
https://cdimage.debian.org/debian-cd/current/amd64/jigdo-dvd/
to get nearer to the size limit of 93 GiB.

The burn program has not much stake in this issue. Use what suits you
best (and what can cope with the medium type).
The script merge_debian_isos offers to do the burning directly from
the submitted smaller ISOs. See

Given that you plan to use an expensive write-once medium, i advise to
first make a test run by
