Sure. You can use several disks when partitioning.
That's manual partitioning though.

FWIW automatic partitioning with LVM allow to use multiple disks with preseed and a custom recipe. See <https://sources.debian.org/src/debian-installer/20250803%2Bdeb13u1/doc/devel/partman-auto-recipe.txt> for details. But it won't prompt for anothe disk.
