we chose to disable sources entries for more cases (so a higher chance for such disabled entries in summary),

This change was only aimed to disable installation sources on drives other than optical discs (USB, SD card...) for convenience because they would be unusable and break apt after installation anyway, regardless of network mirror setup.

maybe we should think about changing the default in the dialog mentioned above?

I guess the default should be set to the most desirable option for most users of DVD images.

(or make that smarter: switch the default to Yes, if the entries for cdrom sources are tend to be disabled, or No otherwise?)

Smart indeed. Also the installer could warn the user that the installation media will be disabled after installation, encouraging them to use a network mirror. Daniel's reply inspire me another idea: some users may wish to not use a network mirror during installation but have it set up on the installed system.
