Having returned to compare the text and speech-synthesis install modes in more
detail, I now believe that the two are in fact equivalent, and that I had
simply not explored all the menu options available.  To quote from #debian-boot
IRC today, a few moments ago:

  17:32:21 <jayaddison> Sledge: I think the problem I sensed re: wifi
network configuration with speech synthesis compared to the default
text/ui installer can be considered user error/lack-of-understanding.
in the text/ui versions, there is a "go back" option -- and that's
what I used to proceed with the other install steps.  in speech synth
mode, that option doesn't appear until the user enters a `?` for help.
