Yes, that's correct.
Using priority=critical leads to questions not being asked, if they have a
reasonable default value; and the default value for the "tasksel tasksel/first"
question is "Installing gnome desktop environment".
So you get Gnome, if you bypass that question :-)

Setting
tasksel tasksel/first multiselect standard
in your preseed file would also work (installing all "standard" packages,
and that's it; would lead to what's often called a "minimal Debian system").
