Comments/Problems:
Installation went smoothly! No regressions for me at least.
I went with an encrypted LVM installation as that's what I usually use.
The previous installation on this SSD was already encrypted. To avoid
wearing out my SSD, I canceled/skipped the overwrite process before the
encrypted partition was created.
I forgot to tell the installer to _not_ use an EFI partition on a separate
drive, so it overwrote it (see /dev/nvme0n1p1 partition above) without taking
into account the OS (another Bullseye installation) that was on it.
(I prefer to have an EFI partition on the same drive as the OS).
As for tasksel options, I stuck with the default options (GNOME desktop)
but also selected SSH server.
Likewise with Bullseye Installer RC 1, I had no trouble starting GNOME or gdm.
