I've seen in the git commit cb6b94900c27495ed58b698fb8a4d4e00d0962b1 that the kernel version even has been bumped to 5.10.0-6, but only for the *daily builds*. The *released version* of the debian-installer still is 20201202 [1]. This is the version that is used per default by the live-build tool, which downloads from the regular location [2]. I known that the final deadline for releasing Debian 11 is getting real close, so I'm not sure whether you should be burdened by creating intermediate releases.
