It's possible that this has been done somewhere in d-i. This was my
experience with the current d-i:

Main menu: "Partition disks@
(scans disks)
Menu: [!!] Partition disks
"This is an overview of your currently configured partitions ..."
(select Guided partitioning)
Menu: [!!] Partition disks
"If you choose guided partitioning for an entire disk, ..."
(select Guided - use entire disk and set up encrypted LVM)
Menu: [!!] Partition disks
"Note that all data on the disk you select will be erased, but not
before you have confirmed that you really want to make the changes.

  Select disk to partition:"
(select disk)
Menu: [!] Partition disks
  "Selected for partitioning:

   SCSI1 (0,0,0) ...

The disk can be partitioned using one of several schemes. If you
are unsure, choose the first one."
(select separate /home, /usr, /var, and /tmp partitions)
Menu: [!!] Partition disks
"Before the Logical Volume Manager can be configured, ...
[no description of data wiping on this page]

Write the changes to disks and configure LVM?
(select Yes)
(sets up partition table and begins wiping data)
(select Cancel)
Menu: [!!] Partition disks
"You need to choose a passphrase ..."

So as you can see, for the route which I took through d-i, it was
entirely non-obvious that the data wipe could be cancelled without a
problem.
