Thanks for pointing that out. I've changed my fstab to ubi0:rootfs to
reflect that of the kernel args. Now the fstab entry looks like:
ubi0:rootfs / ubifs defaults,noatime,ro 0 0
This results in no change in behavior for either update-initramfs or the
numbers of / entries in /proc/mounts.
