Are you sure you selected the "Desktop" task for installation? That should have given you both XOrg and GNOME. We test this extensively before release and are fairly sure it works correctly. We hope to find developers interested in making it more "graphical", though without adding too many frills and whistles and trying to avoid really major diversions between the textual and graphical installers.
