I'm afraid that we just present the names as the kernel gives them to us 
There are a few exceptions, but IEEE1394 does not seem to be one of them.

I can update the description for sungem though:
-sungem:Sun GEM Ethernet
+sungem:Sun "GEM" 10/100/1000 Ethernet

Could you please send the output of:
# grep "kbd-chooser\[" /var/log/installer/syslog

And also all the answers you have given during reconfiguring console-data 
(easiest way to get those is probably to run it again).

Known issue. See the errata for Etch Beta 2. We're hoping to resolve that 
for the next release.

There is a change happening with regards to locale handling. This is a 
known issue and will probably be resolved in the near future.
